I will start with a Kale recipe for all those wondering what to do with Kale. There are many healthy and delicious dishes to prepare. Here is one that is a staple in our home.
Succulent Kale and Beans
Ingredients:
1 T extra virgin olive oil 2 cloves garlic, minced 3 cups chopped kale or mustard greens 1 cup cooked navy beans or cannelloni beans (preferred) 1 T natural soy sauce (more if desired) Dash of black pepper
In large skillet over med-low heat, heat oil. Add garlic and sauté briefly, being careful not to let brown. Add greens and sauté until wilted (1-2 min.) Toss in beans, soy sauce and pepper. Sauté 1 more min. Add water to barely cover bottom of pan, cover and cook until greens just tender.
**(Add honey to taste on another occasion for sweeter flavor!)

Excellent recipe and my family loved it - the only thing I did different was to add some organic beef stock to make it more "saucy". Great breakfast food for me too!
